This creamy over night chia pudding is one of my to go breakfasts and I love it because it is healthy, filling, free of dairy and makes me feel so good.
You can make it in the evening before you go to bed and have it ready the next morning.
I normally place it in small little glass jars so we can take our breakfast with us if we're having a busy morning. Or if we just want to bring it as a snack during the day.
Chia seeds are one of my fav seeds since they're so nutrient dense and packed with vitamins, minerals, protein and good fats.
What you'll need:
8 tbs of chia seeds
Plant based yoghurt (I used plain coconut)
2 tbs maple syrup
Kiwi (or your choice of fruit) - mango or pineapple is also very nice
Place in a glass jar or glass your choice of fruits. In this case kiwi
Mix together the chia seeds, yoghurt and vanilla powder
Add it into the jar/glass
Then layer with yoghurt only then chia mix, then yoghurt only, chia mix.
Leave some space on the top for the berry topping.
Let the frozen blueberries defrost and mix them with the maple syrup.
Add it on top of the yoghurt/chia mix.
Keep in the fridge and eat it or bring it with you in the morning.
Optional: Add some granola on top as well if you want that extra crunch.
