Quick vegan gluten-free waffles

Hey you!


I have the best recipe for you for the perfect breakkie. This is one of my favs and me and my love sometimes eat this when we want that extra luxury feeling for breakfast.


They are gluten- free and dairy free, yet contain healthy protein, carbs and fats for the perfect vegan breakfast. Flax seeds make an amazing vegan binding agent instead of eggs.


Here's how to make them:

2 tbs flaxseeds + 6 tbs water makes 1 flax egg.

Let it sit for around 10 min until it gets jelly.



You will need:

2 flax eggs

1,5 dl oat flour

1 dl coconut flour

1/2 dl of shredded coconut

1,5 dl coconut milk

1 tsp baking powder

1 tsp cinnamon

2 tbs maple syrup

2,5 tbs coconut oil

1 tsp of vanilla powder

Pinch of salt

2,5 tbs coconut oil + some extra coconut oil for the waffle maker

Instructions:

  1. Whip the "eggs" and coconut milk fluffy together

  2. Melt the coconut oil and add it to the mix

  3. Mix all the dry ingredients and then combine everything together

  4. Heat up the waffle maker and add some coconut oil

  5. Add some mix and make your waffles


Tips: Make your own berry jam by mixing on low heat your choice of berries, chia seeds and some maple syrup. Add some coconut yoghurt for a extra creamy waffle.
